When I was diagnosed about 4 years ago, the food choices weren’t very good. Most of the stuff was really expensive and tasted like either cardboard or packing peanuts. Thanks to government food labeling and much more awareness there’s a lot more selection now, but I still like to do my own cooking, that way you know what’s in there!!! (Story time: I was lied to by a waitress at PF Chang’s who HAS a GF menu and got REALLY sick. Trust no one, kids!!)
So to keep all of you from getting sabotaged by a waitress at PF Chang’s, here are my favorite things to keep in the kitchen:
My 3-cup...

Last week I was back in St. Louis at my parent’s house, where my dad and sister also have Celiac. My mom was going to be out for the evening and told me to make the frozen Andrea’s gluten free pizza for dinner. Andrea’s is GF bakery, located in Chesterfield, MO.
When it is thawed, you have to be very careful if you are going to move it. When uncooked, the crust is fragile. It cooks the same way any frozen pizza does. We had the Spinach Artichoke Cheese pizza.
I didn’t have very high expectations for this “fake pizza”, but it was pretty...

I love BBQ! I am extremely excited that BBQ, with a gluten free BBQ sauce, is GLUTEN FREE!
I’ve run across this recipe all over the internet in the past couple days, and even on the evening news, so I figured I was missing out if I didn’t blog about it, especially since it is GLUTEN FREE! My favorite food, besides pizza or a good steak, is probably bacon.
Whoever came up with the Bacon Explosion is a genius!!

Well, I was a normal college student, ate normal college food, drank normal college beer, up until the fall of 2001, the final semester of my senior year. I actually had minor surgery and afterwards gastro problems hit me like a ton of bricks. 3 gastroenterologists, 1 internist, years of testing… I don’t even remember how many colonoscopies…2 upper GI’s, 2 endoscopies, 2 camera capsule tests, and riding on the train with unmentionable samples for the lab…no diagnosis.
Finally, someone decides to do some allergy testing (only took 3 years…) lactose-negative (and I always thought...

Over the past few months, I have been tired all the time and will sleep for a long time every night. It wouldn’t be uncommon for me to sleep 10, 11, 12, or occasionally 13 hours a night! I just don’t get it. A “good nights sleep” is usually referred to as 8 hours.
My abnormal amounts of sleep is one of the main reasons I am finally switching to a gluten free diet. It isn’t like I am getting sick all the time, I just sleep a lot and could take a nap at any point during the day. If I make myself get up after 7 or 8 hours of sleep, I find myself taking a...
