“Celiac Sandwiches”

The hardest time for me to eat gluten free is when I am out doing things or need to take a lunch somewhere. One quick and simple solution I came up with is, what I like to call, “celiac sandwiches.”

Basically, they are just lunch meat wrapped in cheese…. pretty similar to lettuce wraps. I quickly run into a grocery store and pick up some lunch meat and cheese slices from the deli. I don’t know yet which brands of lunch meat are 100% gluten free, but I know if I stick to the name brands, especially Boar’s Head, that there is a pretty good chance of it being GF.

You can use any lunch meat, cheese, lettuce, and sauces that you would like.

    I do the same thing – they are called meat rolls – I roll the meat, but before I do I add lettuce, mayo and cheese. Not too bad when you are on the go and in need of a quick lunch. Red Robin even sell a hamburger sandwich wrapped in lettuce. The trend is catching on.

    Hey! I like to do the roll ups as well, but sometimes I use soft corn tortillas that I steam with a damp paper towel for about 20 sec. in the microwave. I also have put lots of different “sandwich” toppings on the flat, fried corn tostadas, even pizza toppings! I’m wanting to try wrapping stuff in the softened rice papers they use for spring rolls, but when I’ve tried they keep breaking.

    Good info! I sometimes carry the soft or fried corn tortillas or a bag of crackers with me just in case I need something fast to use with sandwich stuff when I’m out and about.

    I do this same thing as well! I also just started making the pickle rollups and they are so yummy! You take a piece of ham and spread the whipped cream cheese on it and put a pickle in the middle and roll it up.I usually cut it up into small pieces as well.
