I also just started making the pickle rollups and they are so yummy! You take a piece of ham and spread the whipped cream cheese on it and put a pickle in the middle and roll it up.I usually cut it up into small pieces as well. I do this same thing as well! I like to do the roll ups as well, but sometimes I use soft corn tortillas that I steam with a damp paper towel for about 20 sec. in the microwave. I also have put lots of different "sandwich" toppings on the flat, fried corn tostadas, even pizza toppings! I'm wanting to try wrapping stuff in the softened rice papers they use for spring rolls, but when I've tried they keep breaking. Good info! Not too bad when you are on the go and in need of a quick lunch. Red Robin even sell a hamburger sandwich wrapped in lettuce. The trend is catching on.
