Oh - I love that idea about freezing the rice. I was not sure if you could freeze rice or not. The last time I was in a Chipotle (lucky enough to be near one!!) they told me about the lime. Are you familiar with Chebe (pronounced Chee-bee - took me forever to figure that out)? It is the coolest stuff. I finally played with it this weekend. I used the cinnamon package and made the twists. I think - no I know - I ate a whole pan that night! I know, I am a total oinker! :) I also used the Garlic and Onion package and on the back it suggested you use it to make tortilla bowls - which would be so easy! See I did have a point - sometimes it just takes a while to get there! haha. But now I tell my friends they can't laugh at me because I have a disease and it is my "Celiac brain fog." ;)

You are making my mouth water! I need to make this tomorrow for dinner. I saw on a copy-cat recipe web-site that Chipotle adds a little lime juice to their rice. A hint for keeping rice fresh: I put single servings into ziploc bags and freeze. Just pop one in the microwave and you have hot 'fresh' rice in 2 minutes!
