I am looking for feedback on this one….
I have been doing very well eating gluten free! I have been eating great while at home, not drinking beer, and making the right choices when going out to eat. Tonight on TV, I saw a little health reminder that fiber is an essential part of your diet to eating healthy. It help in the digestive process and prevents future problems.
While eating a simple gluten free diet, I am probably lacking in fiber and some other important areas! What ares do we gluten free-ers miss and how can we make up for them???
Just when I thought I was doing well… I realized I am probably not doing as well overall as I had thought.
hey DIG if you are eating gluten free you are still probably getting fiber. The sorghum flour we use in our mixes is higher in protien and fiber than wheat flour.You can also get the needed fiber from fruits and vegtables and nuts which are all gluten free
Legumes are great, too, such as black beans, split peas, all varieties of beans, chick peas, etc. Also if you can find ways to prepare it, oats are good whole-grains. And I recommend quinoa, a grain you can find at Trader Joe’s that’s quite tasty & high in fiber and protein.
Seconding the quinoa and legumes & fruit. Also, don’t forget the wiiiiide variety of brown and wild rices, all of which are high in fibre. And nuts! I think you can get Montina in the States (haven’t found it in Canada yet) and it’s a “super” grain.
Invest in “Gluten-Free Diet – A Comprehensive Resource Guide” by Shelley Case. You will find ALL the info you’re looking for – alternatives, substitutions, where to buy, recipes etc.
Part of the difficulty of going GF is being cut-off from all the usual “healthy” alternatives, but we are forced to experience tastes and textures that most people will never get the opportunity to, simple because they don’t have to!
A simple fiber laxative in pill form is simple and easy way to guarentee your fiber intake. Salada and veggies are good for you too!
