To me this is just another sign that the disease is become so prevalent, that even Costco is talking about it. Costco has even become pretty good about carrying some gluten free products.

Actually I found this to be a TERRIBLE article in some ways about gluten. The doctor “expert” says that a gluten free diet shouldn’t be attempted unless a gluten allergy has been confirmed. Seriously? Has he had his head under a rock? Almost every knowledgeable nutritionist and holistic physician worth their salt knows that gluten causes inflammation in some way for everyone and makes almost every disease and condition on the planet WORSE. The “expert” in the article also says that gluten free diets are low in fiber. Again, totally off-base and misinformation. If someone is eating a lot of gluten free foods and little else, their diets may be low in protein because gluten is a protein that is removed, but most people on a healthy gluten free diet will have more fiber in their diets than people on the SAD. It’s great to see more social consciousness on gluten free diets, but hopefully Costco will find a reputable expert next time they publish an article on nutrition.
I find that adding flax, using more of a whole grain flour such as buckwheat, sorghum, amaranthoat, millet; shiratake noodles; brown rice pasta; and guar gum instead of xanthan gum really helps increase the fiber.
