What is a good way to ensure decent gluten-free meals while hospitilized? I was recently hospitilized and faced with the same food choices each meal.

I am really struggling since I went GF. I started to see amazing differences within 2 weeks and my health improved immensely, then I had a slip & and ate some cake & now I crave gluten products all the time & find myself eating things I wouldn’t have eaten before like a whole ream of wheat crackers. I feel better temporarily, then I crash and feel really ill. Any ideas on how to overcome that. I don’t have celiac.
Are you aware of any products that once sported the gluten-free label but they no longer do?
Mission white corn tortillas. The new packaging says nothing about gluten.
I live in Eastern Ky. and I am having a terrible time find a selection of pasta.
Does anyone out there have a suggestion as to the best pasta that does not taste like cardboard and the will cook up. The one I have now even when I cook it longer than suggested, it hard and just “nasty” This is what I miss most being gluten free! GOOD Pasta. HELP!

I just tried some Conte’s pasta for the first time last night. It was very good.
