With my current addiction to Chipolte starting to hurt my bank account, I decided that I could make my own burrito bowls at home. I just looked at what they use and decided it was pretty simple. I didn’t use exact amounts for anything…. I just winged it!

The hardest time for me to eat gluten free is when I am out doing things or need to take a lunch somewhere. One quick and simple solution I came up with is, what I like to call, “celiac sandwiches.”
Basically, they are just lunch meat wrapped in cheese…. pretty similar to lettuce wraps. I quickly run into a grocery store and pick up some lunch meat and cheese slices from the deli. I don’t know yet which brands of lunch meat are 100% gluten free, but I know if I stick to the name brands, especially Boar’s Head, that there is a pretty good chance of it being GF.

I found these El Monterey, corn taquitos at COSTCO. They are pretty good, especially with some hot sauce, cheese and ranch dressing(well isn’t anything with cheese, hot sauce, ranch dressing, and maybe bacon?).
I have heard they have a chicken version, but my COSTCO didn’t have them.

I ran across this great article by Linda, “the Gluten Free Homemaker.” I can totally relate to this! On the normal lists of celiac symptoms, you don’t usually find this information.

Let me start by saying… AMAZING! By far, surpassed my expectations, of ALL pizza.
Nine out of ten stars, on the: “Mike’s Official Gluten Free Pizza Review Scale!” I gave it a 9, instead of a 10, because I have to leave room for the chance that someone could top this experience, but it would be tough.

During my recent trip to Half Moon Bay and San Francisco, I insisted that we stop at Amici’s East Cost Pizzeria. They use Still Riding Gluten Free crusts. It was a very nice pizza restaurant and even had gluten free signs on the windows.
All of the pizzas are a little more expensive than I am used to in the midwest, and the gluten free 12″ pizzas are in the $25 range… ouch! I figured, we are on vacation, so I would get it. The pizzas look amazing!
