Elisabeth Hasselbeck has Celiac and has recently released book about living gluten free! I have always thought she was hot… on Survivor, a hardcore Republican, and now I find out she has Celiac!!! She is moving up on my celebrity hot list!

Over the past few months, I have been tired all the time and will sleep for a long time every night. It wouldn’t be uncommon for me to sleep 10, 11, 12, or occasionally 13 hours a night! I just don’t get it. A “good nights sleep” is usually referred to as 8 hours.

It appears that most people with Celiac really miss eating pizza… I know I do! I would like to start a list of places that serve gluten free pizza, bakeries that sell premade crusts, or good GF pizza making products.

As I sit in a friend’s aparment, he is eating pasta and is enjoying a beer… for the first time, I doesn’t bother me!!!
In my first 20 days of eating gluten free, I have lost over 10lbs. I’m not starving myself or really concentrating on cutting calories, I’m just cutting out the gluten. Seeing a lower number on the scale almost every day so far, has kept my spirits high and mind on the right track. In the past when I have tried to eat gluten free, it would drive me crazy to watch people eat pizza and drink beer. As of today, I can say that I am over it.

January is Girl Scout cookie month! There have been two boxes in my house for a week now… and I finally couldn’t handle it any longer. Today, I was starving and had to have just three. If I have some gluten free cookies around, I may not have buckled under the pressure.

Today I was out doing some shopping with someone I had just met. When it came time for lunch, I asked her where she would like to eat. I decided not to share that I was eating gluten free and then become a burden on where we could eat.
