Today I had the opportunity to interview Daniel, the manager of the Overland Park, KS Godfather’s Pizza location, and try one of their gluten free pizzas. The pizza was great, and Daniel was very knowledgeable on gluten free food preparation. I feel very safe eating at Godfather’s after seeing first-hand the steps they take to ensure there is no gluten or cross-contamination.

Bread is a useless vehicle, used only to assist moving the essential meat and cheese into your mouth without getting your hands messy.
My aunt makes these great sandwiches that I can no longer eat; brisket, bacon, tomatoe and cheese on a crissont. She had a bunch of leftover brisket and bacon that she gave to me this afternoon. Since I was thinking about those sandwiches all afternoon, I decided to make my own version with the food she gave me and what I had in the fridge. It was so good, I thought I should share.

If you haven’t heard, Elisabeth Hasselbeck is being sued over allegations of plagiarism and copy write infringement. Author and self publisher, Susan Hassett, wrote a book published in April, 2008 called “Living with Celiac Disease.” Apparently, she sent a copy to Hasselbeck, shortly after Hasselbeck was diagnosed.
Susan claims that Hasselbecks book is strikingly similar to her book in content and layout. The letter from Susan Hassett’s attorney can be found here: TMZ.

What are your favorite restaurants? Are these different than before you followed the diet?
My favorite restaurants are ones that I know are very aware of the gluten-free diet. I enjoy Maggiano’s because the chef always comes to your table and talks to you. I also like P.F. Chang’s.
Are food industry workers knowledgeable about Celiac disease?
I think they are becoming more knowledgeable about the disease. I always have questions regarding the menu when I go out...

Are these different than before you followed the diet? Back when I was only lactose-intolerant, Asian food was my standby since they use very little dairy. Now that soy sauce is a no-no, I’ve had to rethink...

We tend to eat at the same independent neighborhood eateries. I have avoided chains like the plague, but I am encouraged by the thought of GF menus in more “big name” places.
Are food industry workers knowledgeable about Celiac disease?
No. Nope, and just plain “not even close”. The staff at any restaurant turns over too fast for there to be any lasting impact...
